No Bake Dream Dough

Stop what you’re doing. I mean, not literally, but please take note. I have created what I think is the only raw vegan don’t-even-think-about-baking-it cookie dough recipe you’ll ever need. Did I mention it’s raw and vegan? It’s also just a few ingredients and they are basically staples… or need to be stat since you’ll be making this all day errrrry day, fam. It all began with a cookie dough dream

Ok, so have you ever bought something at the health food store just because it was so expensive? No? Just me? Ok, great, perfect. Glad we’re on the same page. Anyway, I was at Lazy Acres, my second favorite place to hang out outside of bed and bought these white chocolate truffles that were literally the dreamiest almost $10 I’ve ever spent. Might I add that it was $10 for four very tiny truffles? Don’t quote my math but that’s like more than $2 per truffle. Like I said, I will buy anything once until I either find it for less on Amazon of reverse engineer the recipe.

I am literally an engineer!

Ok so I started with ground almonds, which I made myself by putting whole almonds into my food processor and running it until they were, well, ground. Then I mixed in the magic ingredient that needs to be a staple in your pantry if it isn’t already. Raw Cacoa Butter, friends! I have purchased the blocks of this stuff before but highly recommend the discs as they are so much easier to work with! Then I added delicious coconut nectar. I would say that starting with a smaller amount and adding more to your taste preference is absolutely the way to go with this one. I’ve made this in the past and put too much sweetener in and it is not cute. No, no, no.

All cashew butters were not created equally

Real talk, this needs to be taught in school. Cashew butter comes in all shapes and sizes… not entirely sure this statement works in this regard but I have a feeling you’re picking up what I’m putting down. I would hands down, and very unsponsored recommend Artisana Organics Cashew Butter. It is the creamiest, dreamiest, organic-iest cashew butter, nay buttahhhh on the market. Invest, use it in this cookie dough recipe and thank me later… maybe on my most recent instagram? Great.

Unlike this recipe, this post is taking a long time

Yo, I’ve hit my word count goals and casually don’t want to keep you from this cookie dough recipe any longer. If you haven’t scrolled past this by now, well what are you waiting for? Head over to your local health food store, Thrive market (if you don’t know, now you know) or Amazon and snag the ingredients for what I like to call, Dream Dough!

Oh, wait, the garnish!

Did you know I’ve been having a very torrid affair with Pearl Butter? Like, it’s getting bad. I just can’t keep myself away from this magical superfood flavored coconut butter! I used their brand new Fairy Butter flavor (can you say Strawberry Coconut Butter?!) and drizzled the efffff out of it on top of the Dream Dough. Then I manifested some dried rose petals (always choose organic, pesticide free, always!) and edible gold luster dust! Ooooooh and those plates are from CB2 and they were like $3 each. The instagram dream if you ask me!

The tastiest raw vegan cookie dough you'll ever meet. I'm being serious here. Make it and be ready to eat it all.

Serves: 20 small bites
Ingredients
  • 1 cup Ground Almonds
  • 1 cup Cacao Butter
  • ¼ cup Coconut Nectar*
  • ½ cup Cashew Butter
  • 1 tbsp Maca Powder (optional)
  • 1 tsp Vanilla Extract
  • Pink Salt to taste
  • ¼ cup Raw Cacao Nibs
Instructions
  1. Add Almonds, Cacao Butter and Coconut nectar to a food processor and run until combined. Resist eating it all... it gets better
  2. Add Cashew Butter and Vanilla and process
  3. Add Maca and salt, blend and rejoice
  4. Gently fold in cacao nibs and add more if you want to get freaky like that
  5. Press dough into a mold of your choice. I like this silicone oneand always recommend splurging on higher quality silicone molds. I promise it's worth it!
  6. Let set in the fridge for 15 minutes or overnight
  7. Before serving garnish with Pearl Butter, dried Rose petals and edible gold luster dust

*I have made this recipe with Maple Syrup however I prefer the more delicate flavor of coconut nectar. Per usual, you do you boo
